To keep with the theme of easy prep and minimal cook time, this is a total play off a dish my mom used to whip up when I was a kid with a major difference... LESS STEPS! My mom's recipes calls for frying the tortillas in oil and filling them with the ingredients to make into enchiladas in addition to all the other steps, however, I admit I don't do that. Honestly, sometimes I don't even cook the meat myself (I'll explain below). My family loves this recipe! It can be made in a pinch if you are short on time! 🤣
